Raw ham, Roman esplanata, norcidella, loin, larded salami
100% Italian buffalo milk mozzarella, from farms in Rome and Viterbo, served with raw ham.
Fresh burrata on a bed of cherry tomatoes, garnished with anchovy fillets. A simple appetizer full of flavor.

First courses
Bronze-drawn artisanal pasta with seasoned pillow from Umbria, PDO Pecorino Romano cheese and tomato.
Short pasta format with the classic Coda alla vaccinara ragù, slow cooking and traditional Roman scents.
Homemade potato gnocchi, served only on Thursday as required by Roman tradition.

Main courses
Abbacchio delle Terre Lazio baked with potatoes, scented with rosemary and garlic. A second of the most authentic Roman tradition.
Pan-fried lamb coratella with fresh artichokes. A typical Roman dish with a strong and genuine flavor.
The great classic of Capitoline cuisine: slow-braised beef tail with celery, tomato and spices, according to the traditional recipe.
